The oil from Mani is one of the finest in the world because the olive production remains “family affair” up until last stage
Also the Greek soil (rocky and dry) in combination with climate, favourable to olive oil (extensive sunlight, stable temperatures, leading to the products of the finest quality
The oil characterized by a pleasant aroma of herbs and slightly spicy flavour, fresh and mildly fruity
No chemicals used in production
The olives are picked between November to January
We put them in vegatable fiber sacks
We clean the leaves and we wash the olives
Pressing and mixing the olives
Separation of solid and liquid into virgin olive oil
Oil retained in the tank, and is cleared by itself by sinking
Fitration though filter paper
Stored in a new clean stainless steel tank
Bottling and ready for use
Storage information:
Best stored in a dark place away from direct heat
Don’t refrigerate. At cold temperatures the oil can become cloudy and will start to solidity. This is natural and will disappear when returned to room temperature
